  2. Fishing

    Almost every Sunday night my husband and I pack up the car with all of our fishing stuff and head out to the lake. We go on Sundays because most people have to work on Monday and the lake has a lot less people.

    This year has been a slight disappointment. Not because sometimes you catch fish and sometimes you don't but because of people.

    When I go fishing I go to sit in the quiet and just relax, this is not possible these days and it has been heartbreaking. It has become almost impossible to go out to the lake, sit on a dock and fish without a bunch of people there, playing their circus music and netting fish.

    Did you know it takes a family of 6 to watch one fishing pole? I didn't either, I guess I have been doing it wrong all these years.

    So last night we gave up our normal spot because there were just too many people. So we tried the first place I ever caught a catfish and it was quiet YAY!

    We finally find a quiet place, all alone, peacefull, fish were biting and all of a sudden, typical of North Carolina, a thunderstorm appears!


    I thought since I mention fishing at least once a week I would show off our catch.

    I don't know why but I wanted a pic of his face!



    I love cat fishing but we hate cleaning them, plus they talk, so I don't like keeping them, we ALWAYS throw them back.

  3. Paula Deen's Banana Nut Cake with Cream Cheese Frosting

    Here is another winner. We had a bake-off at work and this one got me the 1st place in the "taste category". Thank you, Paula Deen!

    Ingredients:

    Butter, for greasing pans
    3 cups all-purpose flour, plus more for pans
    2 cups sugar
    1 teaspoon baking soda
    1 teaspoon ground cinnamon
    1/2 teaspoon salt (not in picture)
    3 eggs, beaten
    4 large ripe bananas, mashed
    3/4 cup vegetable oil
    1 cup chopped pecans
    1 1/2 teaspoons vanilla extract

    Frosting:
    1 (8-ounce) package cream cheese, at room temperature
    1/2 cup (1 stick) butter, at room temperature
    1 pound confectioner's sugar, sifted - aka powdered sugar, depending on where you live
    1 teaspoon vanilla extract
    1/2 cup chopped pecans



    Directions:

    I find it helpful to pre-measure everything and to set it aside.



    Butter and flour three (9-inch) round cake pans; Set aside. Preheat oven to 350 degrees F.



    I use "Cake Release" instead. Works like a charm, every single time.



    In a bowl, stir together the flour, sugar, baking soda, cinnamon and salt.



    Next, add the beaten eggs and oil. Stir just until the dry ingredients are moistened, do not beat.



    Stir in the mashed banana, the pecans and vanilla. The batter will appear a bit dry at first, but this will change ...
  4. The Mask

    Wearing a mask, white face with drawn on tears,
    She dances to music that no one else hears.

    Her grotesque smile is smeared in red,
    Corners turned down where the paint has bled.

    She creates an illusion to deceive the crowd,
    Because the showing of herself is not allowed.

    Do not judge because you know her not,
    How her heart was bruised and left to rot.

    Now the show is over and the fools are gone,
    She removes the mask and all is shown.

    The mirror reveals her beauty and grace,
    By the gentle smile spreading across her face.

    She was forced to wear the mask to protect,
    Her soul, her heart, and her self respect.

    She will keep the mask close at hand,
    For tomorrow she will don it once again.

    But someday soon she hopes to reveal,
    Who's beneath the mask and how she really feels.

  5. Baked Pork Chops

    Ok so I tried this and it is AWESOME!

    You need:
    2-1-1 1/2 inch thick chops
    1 large can of cream of mushroom soup
    1 (use the soup can) large can of milk


    Preheat oven to 300 degrees

    Combine milk and soup, whisk until blended well

    Place chops in deep casarole pan

    Pour soup mixture over the chops, flip them to make sure you get it on both sides


    Cook 3 hours covered

    The pork will be so tender it will just fall apart!

    we like to put it over rice or noodles.
