Being an unemployed bum allows me plenty of time to do things I enjoy around the home front.

The month of February I have decided to cook a different meal every day of the work week. I'm aiming for "different" and avoiding the common. Keep in mind that US 'common' meals are as varied as the entire world because we are, after all, a Nation of filthy immigrants. But yes .. there are certain distinctly "American" foods.

I have three goals:

1. Not to make the same meal twice in February.

2. Make a meal that did not originate in the US and/or not cook a US variant of a meal that originated in another country.

3. To go with fresh foods in each day's meals with an emphasis of calorie counting and portion control.


So for today I will cook the following:

Note:

Buying the ingredients for the day of the meal, in quantities only for THAT meal = prohibitively expensive.

I spent $73 today .. for tonight's dinner time.

I will keep a tally for each day.


Up until about 75 years ago one rarely found the common man to be a fat out of shape bastard, because he had to work sun up to sun down in order to afford his sustenance. Also one commonly found the wealthy to be somewhat rotund and this was often seen as a sign of being well-to-do because only the wealthy could afford an abundance of foods.

Today the opposite is true... as I picked the freshest produce and the purest of ingredients I could find and came up with a $75 receipt. I could eat for two weeks on $75 if I went a nutrient deficient, fat laden, calorie abundant route.

Its a goddamn travesty that is the USA.. a TRUE land of plenty that we have gotten to this state of affairs.

You are right on the mark with this one, it is shocking what "good for you" food cost compared to junk.

I started going to the farmers market and found it is a lot better then the giant mega food stores. I still have strawberries, blueberries, peaches, apples and corn that I bought last year in the freezer. I have canned green beans that we have been eating on for two winters now. I figure that raising my own or helping local farmers is a lot better then feeding tons of money to the large chains.

I'm lucky to have in-laws that have a plentiful garden and neighbors who raise their own livestock. We have a Kraft Mac-N-Cheese and Ramen noodles budget.

I like your idea to try something new every day, Gary. If I weren't so damn lazy and cheap perhaps I'd do the same.

Actually, I tried to do the same back in September when I was an unemployed bum, and it lasted all of 3 or 4 days. I'm a lazy bitch.

I used to love Ramen as a kid, but I barfed them up once and have never been able to recover.

I hate just ramen, just because we had to eat it so much; however, you can make them taste like things other than ramen lol.

Just one idea I used, cook the noodles and throw the seasoning pack away. Season with Chinese hot sauce and light soy sauce. Changes the flavor completely.

I cook something different everyday (because I get completely bored if not) Usually some variation of pasta, rice, salad or pizza..or sometimes a variation of some kind of meat - usually chicken - with vegetables.

I love pasta --- but there's only so many times a week you can eat it before you want to throw up from the blandness of it all. Unfortunately.

I love noodles. My favourite pastas are: tortellini, the twisty one - I forget what it's called and egg noodles. But I think Ramen noodles are yummy for a quick lunch. Shame they don't really have any health benefits though... and all that MSG... oh well. Tastes good. (okay every once in a while)

Today's dinner gets 10 thumbs up!!! It's fantastic. I love the Falafel. They will go on the list of "Things to eat more often". :-)

I'd suggest sitting your ass down on the couch and checking out some of the cooking shows, especially the cable ones like CAFEASIA.

They have LOTS recipes and techniques to show and tell.

Hand made Thai and Malaysian curry paste are much easier to make than you would have thought. Just need the ingredients and a chopper/blender.

Today:

Argentina !!

I'll be making some Empanadas (http://en.wikipedia.org/wiki/Empanada) with a meat/veggy filling. <---- yum !

( We in America call these Hot pockets (http://www.hotpockets.com/Default.aspx). <--- Yuck



Dessert:

Low Fat chocolate and Pineapple Cake ( I'll add a pic to this post after its done. )


We still have 90% of yesterday's cake wrapped in individual slice configuration. I'm gonna have to figure out a way to miniaturize each dessert from no on otherwise will have a kitchen full by end of month.

This is the Pineapple, yogurt, chocolate cake I made today.

I used low fat low, unsweetened yogurt, unsweetened/natural pinaple, and substituded the sugar with a calorie free option (splenda).

Total cake is less than 600 calories. ( its a 9" x 9" x 1.5" )

The Empanadas filling was really good .. .but the bread shell was WAY too dry. FAIL

I'm still psychologically reeling from yesterday's fiasco. PLus, I wanna cook a much more involved thing on Thursday and we decided to eat a very small meal this evening.

Aww, poor Gary. I've had some fiascos in my time also. I made this cake for my little one's bday and it didn't rise, AT ALL.

It was like a pancake but made of cake. So, I made ANOTHER one, which rose a little bit, and sandwiched them together with frosting.

No.

I think I was way over zealous in my "month of meals" endeavor.

We rarely eat anything on the work weeks that is considered an organized meal. In fact we call the work week "grab and go".

Have you ever done Rosmary & garlic whole roasted chicken?

Simple & cheap. Start with a whole chicken, 4 potatos, 4-5 carrots, a head of garlic, some rosemary, and a lemon. and of course, salt & pepper, or anything else.

Heat the oven to 400 degrees, clean the chicken inside & out, and peel the garlic cloves, cut the taters into 1/4's and the carrots into couple " pieces or whatever. Put them and the garlic cloves in a baking dish. Rub the chicken with olive oil, and put it on top of the veggies, & garlic, using them as a rack. Cut the lemon in half, and put it in the cavity, sliced side up. You can try other veggies too. Personally, I like roma tomatoes. Persian food always has roasted tomato, and it's the only thing you can usually count on not to taste like ass. They have some good stuff, but they also have some nasty stuff, as I guess any culture does. If you get the packet of fresh rosemary, you have a lot, so either save it for another chicken, or stuff the leftover in the cavity, sprinkle the chicken and some of the veggies with rosemary, and the s&p or whatever, and put it in the oven for 20-25 minutes per lb.

The lemon steams it from the inside out, and makes a nice sauce. When you're done, one kickass yardbird

Dude, check out this simple but delicious salad dressing:

1 cube of Tofu
Olive oil
Salt
Pepper

Take the tofu and mash it up with a fork.
Add salt and pepper to your tasting.
Add olive oil to liquify and smooth it out.

And, dont know if you have tried it before, and I know a whole lamb is quite a lump of meat, but goddamn cooking a whole lamb underground is awesome.

What you do:

Take whole lamb, marinate it if you want to, with whatever you damn well please. If you don't know how to marinate anything, you might as well give up cooking already. I would usually go for some honey, bit of bbq sauce, dash of vinegar, blah blah, maybe a spoon or two of jam, and other things, like green peppercorns, FUCKLOADS of garlic. Olive oil, and more things I like. Curry powder maybe, tamarind or whatever.
And of course, fresh herbs. I like to use rosemary, maybe chuck in a few basil leaves as well and whatever else might be growing in my garden at the time.
I also stab larger pieces of meat with a knife, and shove some of that shit nice and deep into the holes to get the flavor all over inside the meat.

So, you have a whole lamb, marinated or not, and or spiced or not.
Stuff it with, again, anything you want. Or nothing at all.
Large pieces of , or even whole carrots, potatoes, onions, baby marrow, and other stuff. Fuck. Even a whole chicken will fit inside. <-Tried & tested.

Now, you tie the legs together so shit wont fall out.
Wrap entire lamb in a couple of layers of alu-foil. What I do then, is wrap all that in a piece of chicken mesh or something similar, leaving rather long bits sticking out at the ends of the lamb (like two handles, almost, which will make removing the lamb from the ground much easier, as well as keep the foil from tearing, leaving your delicious lamb filled with sand, which will suck.

Make a big ass fire and dig a big ass whole, probably almost twice as deep as the lamb thing is high, wrapped up, so you have enough space top cover the bottom of the whole with a layer of hot embers, about 2 inches thick.
Place lamb on top of said embers.
Cover sides and top of lamb with embers, making sure the longer ends of the chicken mesh sticking out above the ground.

Cover the whole lot with a thick layer of dirt, so heat wont escape.

Drink beer for two hours.
Remove lamb, devour delicious tender meat.

Today I went old school;

Gary's deep fried chicken.

Take one cup of hot sauce and one cup of milk, mix until blended.

submerge the chicken in the sauce for a few minutes, remove and then coat with all purpose flour.


Cook for 10 - 20 minutes ( depending on bone in or not .. Ie bone in = longer)


Serve with basmati rice.

Definitely home made. It's a relatively expensive cut of meat, and she puts a lot of time/lurv into it, so we don't have it often--once a year at best. If I had a last meal request, that would be it. The beef wellington she makes gives my mouth orgasms.

So I decided to make a Paella.


While I was going over the recipe I realized I've made this many many times of the years by various names .. MOST commonly called in the US is Jambalaya.


I'm gonna make my Paella with a whole cut chicken, jumbo shrimp and MAYBE some Lobster tail. If the lobster is not available I'll try it with mussels instead.

So I decided to make a Paella.





Dude! Stop right there! You've got to try this easy delicious Entre............it goes with your Spanish Theme.......


Ingrediants:
Green chillies (no need for long ones but must be fat)

Cheese .......(White Cheddar or something with a sharp taste. Don't use the French ones)

Olive oil and Salt

Method:

Cut the chillies length wise.
Don't worry about the seeds. Keep them for the extra hottness.
Stuff them with cheese.
Close up the cut with toothpicks.
Fry in fry pan with Olive oil (not deep fry) until turn a bit brown and cheese melts.
Add your salt while frying and hold it up about half a foot so you get even liberal spread.


Viola!!.........................A winner every time!!

Paella is yummy! I couldn't get over the mixing of the seafood and meat in the beginning. I tried some once where the clam shell had broken... and got that horrible scraping in my mouth/teeth when you bite something that isn't supposed to be there... and EWWWW. That put me off it for about 2 years, seriously. Now I eat it quite regularly if I go out for lunch.

I love the whole mentality of tapas also where you just have a selection of small dishes. It's wonderful. I heart Spanish food and the Med diet.

Cranium... can we get pics with the next meal or whaaaaaaaat?! Thanks.

I'm 100% committed to the P90x 90 day plan. 0% improvise ... 100% planned. I'll post our meal plan when I construct my P90x Tracking blog.

As it is I'm only doing the diet plan until the 21st, and then we'll reset it and start from day one again. ( my Son will be here for two weeks and I'll start the FULL P90 regime after he leaves)

It Is one of those projects that when placed on the back burner became cold and dormant and like many of its kin will most likely never be finished.

Like the TWO M116 trailers that I still have NOT sold ( a year later).

Like the F100, that I've driven about 10 miles in the last several months.

I would imagine like any other country in the world, different prefectures would have different dishes.

This particular Spanish area grows these green chillies in abundance.

The Mexican dish you are thinking about if Chili Rellenos.
A bit more complicated.

I had a look at the recipes and the majority looks damn good. It is not only about calories but also a lot about portion control.
